Shepherd's Pie ============== When I make meatloaf I like to make a double recipe. Make two loaves. Eat one right away and sam eone for making a Shepherd's Pie. Ingredients ----------- - 1 medium onion, chopped - 1.5 cups gravy, thickened stock or stew - 1 meatloaf, crumbled - 3 cups assorted frozen vegetables (peas, carrots, corn, green beans) - 2.5 cups mashed potatoes (8 servings of instant) - 1 egg. Directions ---------- 1. Preheat oven to 350 degrees F. 2. Brown onion. 3. Add gravy. Thicken if needed with a tablespoon corn starch. 4. Mix in meatloaf and vegetables. 5. Transfer to a baking pan. 6. In a seperate dish, mix together mashed potatoes and egg. If using instant potatoes I mix the egg in before the potato flakes. 7. Top meatloaf mixture with mashed potatoes mixture. 8. Bake 30 minutes. 9. Broil 1-5 minutes to brown top. 10. Let rest.
