Grill Marinade for Goat and Other Meats ======================================= Recently given so goat chops, wanting to grill them I found this great marinade recipe. I'm thinking about trying it with pork, chicken, or maybe a London broil. https://www.splendidtable.org/story/2013/06/07/grilled-goat-chops-with-garlic-oregano-and-lemon Ingredients ----------- - 8-9 chops (~2 lbs) - 6 cloves garlic (~2 Tbsp minced garlic) - 1 onion, chopped - 1/2 cup olive oil - 6 T lemon juice (one lemon Zest and juice) - 1 unit alcohol (1 shot or one glass of wine) - 0.5 t salt - 0.5 t pepper - 4 T oregano - optional: fresh herbs - optional: yogurt or sour cream Procedure --------- 1. Combine all the ingredients except the meat in a food processor. 2. Process until finely chopped. 3. Marinade meat for 2+ hours 4. Heat grill to high (~5 minutes) 5. Cook on high for 2 minutes. 6. Flip 7. Cook on high for 2 minutes. 8. Flip 9. Turn down to medium/low 10. Cook on medium/low for 2 minutes. 11. Flip 12. Cook on medium/low for 2 minutes. 13. Take off grill and let rest for 5 minutes. 14. Serve with fresh herbs and a dollop of yogurt.
