Shepherd's Pie
When I make meatloaf I like to make a double recipe. Make two loaves. Eat one right away and sam eone for making a Shepherd's Pie.
Ingredients
- 1 medium onion, chopped
- 1.5 cups gravy, thickened stock or stew
- 1 meatloaf, crumbled
- 3 cups assorted frozen vegetables (peas, carrots, corn, green beans)
- 2.5 cups mashed potatoes (8 servings of instant)
- 1 egg.
Directions
- Preheat oven to 350 degrees F.
- Brown onion.
- Add gravy. Thicken if needed with a tablespoon corn starch.
- Mix in meatloaf and vegetables.
- Transfer to a baking pan.
- In a seperate dish, mix together mashed potatoes and egg. If using instant potatoes I mix the egg in before the potato flakes.
- Top meatloaf mixture with mashed potatoes mixture.
- Bake 30 minutes.
- Broil 1-5 minutes to brown top.
- Let rest.
