Baked Tetrazini
I have recently be experimenting with raw baked pasta dishes. It is based on the finding that a pound of pasta absorbs 2.5 cups of water. This allows baked pasta dishes to be made in the oven with all raw ingredients.
Ingredients
- 2 cans cream of mushroom soup
- 2 cups chicken broth or 2 bullion cubes + 2 cups water
- 2.5 cups water
- A splash of sherry or marsala wine (optional)
- 1 lb pasta (I prefer cavatappi)
- 2 lbs cut up meat (preferably chicken thighs or turkey)
- 1/4 cup parmesan cheese
Procedure
Preheat oven to 350 degrees.
In a baking dish, mix together soup, broth, water and wine.
Mix in meat and uncooked pasta.
Bake covered for 40 min.
Stir. Bake covered for 10 min.
Stir. Bake uncovered for 10 min.
Finish with cheese. Let rest for 10 min.
